Roast Leg of Lamb with Mint Sauce


  • 1 (4 lb.) leg of lamb
  • 3 tablespoons Crosse & Blackwell® Mint Sauce
  • 5 cloves garlic, minced
  • 1 tablespoon fresh rosemary leaves
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste


  1. HEAT oven to 400°F. Place lamb on rack in roasting pan. Stir together mint sauce, garlic, rosemary and oil in small bowl. Rub mixture onto lamb and season with salt and pepper.
  2. ROAST lamb in middle of oven 1 1/2 hours, or until meat thermometer registers 160°F for medium. Transfer lamb to cutting board and let stand, covered loosely with foil, 10 minutes.
  3. SLICE lamb thinly across grain and arrange on a platter. Season with salt & pepper. Top lamb with additional mint sauce.
  4. Simply add roasted red potatoes for a very special dinner.
